Broccoli Chicken Mac & Cheese

When you are trying to eat healthy sometimes you feel like you can't eat your favorite foods, but that's a total lie! you just want to focus on portion sizes! This is a great option because you get lots of protein and lots of veggies! Plus, this will become a family favorite trust me!
Pictured is the BEST Broccoli Chicken Mac & Cheese!

INGREDIENTS
-4 oz. dry whole wheat elbow macaroni (or pasta of choice. I love Chickpea pasta)
-4 tsp. organic grass-fed butter (or organic coconut oil)
-2 Tbsp. unbleached whole wheat flour
-1½ cups unsweetened almond milk (I am sure other milk choices might work, but I did not test them out)
-1¼ cups freshly grated cheese (I used Colby Jack)
-3 cups cooked chopped chicken breast, boneless skinless
-6 cups chopped broccoli florets, steamed. (I used frozen broccoli)
-1 tsp. sea salt (or Himalayan salt)
-½ tsp. ground black pepper
INSTRUCTIONS
-Cook macaroni according to package directions. (Do not use salt or oil if suggested in directions.) Set aside.
-If you haven't already; Steam your broccoli and cook and dice your chicken.
-Melt butter in large saucepan over medium heat.
-Add flour; cook, whisking constantly, for 1 minute, or until brown (don’t let it burn).
-Slowly whisk in almond milk; cook, whisking constantly, for 1 to 2 minutes, or until mixture thickens and there are no lumps.
-Reduce heat to low. Add your cheese of choice; cook, whisking constantly, for 2 to 3 minutes, or until melted.
-Add cooked macaroni, cooked chicken, steamed broccoli, salt, and pepper; cook, stirring constantly, for 1 minute, or until heated through.
-Serve immediately.
