Black Bean Zucchini Brownies!

So I have been hearing a lot lately about black bean brownies, but had yet to try them! So I quickly got searching Pinterest to find a great recipe! There were so many out there with so many varying ingredients that I decided to mix a few recipes and see how it went!
Here were just a few of the ingredients I used!
Ingredients:

1 15-oz can of black beans, drained and rinsed very well
2 tbsp cocoa powder (We we’re out, so I used a hot coco packet😂)
1/2 cup quick oats
1/4 tsp salt
1/2 cup pure maple syrup, honey, or agave (I used half maple syrup and half honey)
1/4 cup oil (I used grape seed, we were out of coconut)
2 tsp pure vanilla extract
1/2 tsp baking powder
1 med zucchini finely shredded and patted dry (you want all the liquid out of these)
1/2 cup to 2/3 cup chocolate chips (These are NOT optional, if you pass on these be warned)
Optional: more chips, for presentation (We used white chocolatier chips)
Let’s Get Started!

1. Preheat your oven to 350 F.
2. Combine all ingredients EXCEPT the chocolate chips in a blender or food processor (We used a Vita-mix blender) And blend. You want the mixture to be very smooth!
3. Next mix in the chocolate chips and add to an 8x8 oiled pan
4. Optional: add more chocolate chips, nuts, peanut butter, or other toppings to the top.
5. Cook for 18-20 mins and allow to cool for at least 10 mins before trying to cut.
Makes 9-12 brownies depending on your desired size. If they seems to look a bit undercooked/gooey you can place them in the fridge over night and they will firm up (Or so I am told, currently testing it out) The kids loved that they were a bit gooey!

Parent tip to making these!
Blend the mixture all together WITHOUT your kiddo so they don’t see what goes into them, but ask them to help stir in the chips! They will love seeing all the chocolate going in to them, and will have NO idea these are made with beans and zucchini!
